Crock Pot Red Pepper Pulled Chicken
INGREDIENTS:
2.5 to 3 lbs. of boneless & skinless
chicken breasts
2 lbs. of red bell peppers, seeded and
roasted in olive oil
12 whole cloves of garlic
1 cup of tomato sauce
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. thyme
1 cup of water
1 medium white onion, chopped very
fine
Direction
•Place the onion, tomato sauce and water
to the crock pot and stir.
•Add the oregano, basil and thyme and
mix.
•Use a fork and hole the chicken and
stuff some of the garlic cloves.
•Put the chicken breasts in the crock pot
so that it is submerged in the gravy.
•Place the roasted red peppers and roast
the remaining garlic cloves and place
over the chicken.
•Cook for 4-5 hours on low.
•Remove the chicken from the crock pot
and shred.
•Remove the roasted peppers and add to
a blender and pulse blend until you get a
chunky texture.
•Place the shredded chicken, topped
with the roasted peppers and a drizzle of
the broth left in the crock pot in the
serving bowl.
