Crock Pot Chicken Herb Soup

 

INGREDIENTS:

1 medium onion, chopped
3 celery stalks, diced
3 carrots, diced
1 tsp. apple cider vinegar
1 Tbsp. herbes de Provence, or several
sprigs fresh herbs
2 organic chicken breasts, bone-in, skinon
2 organic chicken thighs, bone-in, skinon
1 tsp. sea salt
1/2 tsp. fresh ground pepper
3-4 cups filtered water


Directions

Layer each ingredient in the crock pot
based on the order they were listed but
make sure that the chicken is bone side
down on top of vegetables.
Add water enough to cover the
vegetables and halfway up the chicken.
This is about 3 to 4 cups.
Cook this for 6 to 8 hours on low the
remove the chicken.
Let it cool slightly before removing the
bones and skin.
Shred the chicken meat and return it to
the crock pot.
Adjust seasoning.
