Mediterranean Crock Pot Rice Paella

 

INGREDIENTS:

1½ cups of the long grain brown rice

½ lb. sausage

1 onion

1 green pepper

4 garlic cloves, crushed

1½ lbs. of chicken (boneless skinless

chicken breast)

1 lbs. of medium shrimp

1 can of Rotel tomatoes

½ tsp. of Turmeric

¼ tsp. of Paprika

1½ cup of chicken broth

2 tsp. of salt

1 bag of frozen peas

Direction:

● Place the sausages in a skillet and

brown well.

● Toss in all the ingredients into the

crock pot excluding the shrimp.

● Cook for 4-5 hours on low until the

grains of rice are soft and tender

ensuring not to overcook.

● During the last 20 minutes of cooking

add the shrimps and combine well.

● Serve warm.
